Abstract:
Researchers at National Nanotechnology Center (NANOTEC) in Bangkok have studied the application of niosomes for encapsulation of nisin and EDTA. Nisin (Food Additive, E234) are used as antimicrobial substance in food and pharmaceutical applications.

"We are aware that using liposomes for encapsulation of nisin and EDTA resulted in several drawbacks such as high cost, instability, and rapid leakage of the vesicles" said Dr. Phikunthong Kopermsub a member of the research team at NanoDelivery Lab. "For this reason, we needed to find a suitable alternative approach to encapsulate nisin. We were able to fabricate different formulations of niosomes to test various characteristics such as stability, antibacterial, and encapsulation efficiency. Research data shows using niosomes can be an alternative option as it produce promising results"

According to Dr. Phikunthong, this is the first report ever made on the application of niosomes for encapsulation of nisin and EDTA.
The researchers reported their work in Food Research International, ScienceDirect.
Dr. Phikunthong is currently working on innovative encapsulation for food additives and microorganisms.
